Nourishment

I love, love, LOVE to eat. And I used to hate cooking, until I was forced to change my eating habits due to health problems (I used to say if I were rich, I’d never cook again). Since I had a more strict diet, I began cooking a lot more.

For breakfast, I usually eat stove-cooked oatmeal topped with fresh fruit like blueberries or strawberries. Lunch is usually leftovers from the previous night’s dinner. For dinner, it varies. I try to adhere to a pescetarian diet that’s also low-carb, but lately I’ve been moving away from that (too many treat yo’selves). Nonetheless, I try to have some kind of protein (beans, tofu), along with one or two types of vegetables, and a little bit of carbs (quinoa, quinoa-brown rice pasta).

After a month of cooking almost every meal, I realized I actually liked cooking! Of course, I still like eating out, but the options that I can create are endless. I love experimenting, and since I cook for myself, I don’t have to cater the taste to anyone but myself. I’m also trying to get back into baking with flour substitutes like almond and coconut flour. All in all, I hope to expand my cooking and baking skills and document them on this blog.
